This recipe for chai sugar cookies isn’t just a delightful treat for your taste buds; it’s an invitation to slow down, make time for yourself and connect with those you cherish. The rustic charm of these cookies, with their spiced flavours and soft texture, brings a comforting touch to any occasion, making it the perfect way to gather and share moments together.

 

INGREDEINTS

3 tablespoon of Grounded Secret Spice Chai

6 tbsp (75 g) granulated white sugar

1 1/4 cups (280 g) unsalted butter

2 cups (250 g) all-purpose flour

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 1/4 cups (275 g) brown sugar

4 egg yolks, at room temperature

2 tsp vanilla

 

FOR THE SPICED SUGAR

· 1 tablespoon of secret spice chai

· 6 tbsp (75 g) granulated white sugar

 

FOR THE CHAI COOKIES

· 1 1/4 cups (280 g) unsalted butter

· 2 cups (250 g) all-purpose flour, spooned and levelled

· 2 Tablespoons of Grounded Secret Spice Chai

· 1/2 tsp baking powder

· 1/2 tsp baking soda

· 1/2 tsp salt

· 1 1/4 cups (275 g) brown sugar

· 4 egg yolks, at room temperature

· 2 tsp vanilla

Instructions

1 - Add the butter to a pot and heat it over medium heat. Allow the butter to melt and come to a simmer. Simmer until the butter is foamy, giving off a nutty scent and has browned. This takes about 5 minutes. Remove the butter from the heat and transfer it to a small bowl. Pop it in the fridge and allow it to cool completely until it is solid but still malleable.

1 1/4 cups (280 g) unsalted butter

While the butter is cooling down go onto the second step.

2 - Grind 3 tablespoons of Secret Spice Chai in an electric grinder or hand held grinder

3- FOR THE SPICE SUGAR

· Add the Grounded Secret Spice Chai and the granulated white sugar, to a bowl. Whisk to combine.

1 tablespoon of Grounded & 6 tbsp (75 g) granulated white sugar

4 - FOR THE CHAI COOKIES

· Preheat the oven to 350 degrees. Line two baking trays with baking paper and set aside.

5 - In a medium bowl, whisk together the flour, grounded Secret spice chai,

baking soda, baking powder and salt. Then set aside the flour mixture.

2 cups (250 g) all-purpose flour, spooned and levelled

2 Tablespoons of Secret Spice Chai

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

6 - In a large bowl whip the cooled brown butter with an electric mixer on

high speed until it is fluffy, about 1 minute. Then add in the brown sugar and

mix on high speed until creamed together, about 2 minutes.

1 1/4 cups (275 g) Brown sugar

7- Add in the egg yolks and vanilla and mix for one minute on medium

speed until pale and fluffy. Scrape the sides of the bowl as necessary.

4 egg yolks, at room temprature,2 tsp vanilla

Add the dry ingredients to the wet ingredients and combine on low speed.

8 -Scoop the dough into 22 portions with a 2 tbsp cookie scoop, then roll into balls. Roll the cookie dough balls in the spiced sugar mixture.

9 - Transfer the cookie dough on to the lined baking tray .

Bake 8 cookies at a time, for 11- 12 minutes.

10 -Let the cookies cool for 5 minutes, then transfer the baked cookies to a wire rack to cool completely.
